אִישׁ תָּם (ish tam) is richly multivalent: תָּם means complete, wholesome, blameless, or peaceable — the identical word applied to Iyov/Job (Job 1:1) and cognate with תָּמִים (tamim), the term for an unblemished sacrificial offering. The F.O.G renders "wholesome" to honour the word's integrity and completeness; the F.O.G Message uses "peaceable" to sharpen the domestic contrast with Esav's/Esau's wildness. That Ya'akov/Jacob "dwells in tents" (יֹשֵׁב אֹהָלִים) carries later resonance: the tent-dweller will become the patriarch of the Tabernacle nation.
