The man runs away because he is a hired servant and is unconcerned for the sheep.

(13) Because he's a hired hand and He's not concerned about the sheep.

[13] "The hired worker flees because that's all he is - hired help. He has no personal connection to the sheep; their wellbeing means nothing to him."
The F.O.G Paraphrase
and the hireling doth flee because he is an hireling, and is not caring for the sheep.
